Depending on the needs of different products, lactic acid fermentation cultures can be mesophilic (suitable for fermentation at 20-30°C) or thermophilic (suitable for fermentation at 40-45°C), and may contain a single strain (such as Lactobacillus acidophilus) or a composite strain (such as a combination of Streptococcus thermophilus and Lactobacillus bulgaricus). In addition, modern lactic acid fermentation cultures are usually carefully selected to achieve more precise flavor development, fermentation rate control, and adaptability to the production environment.
