Downstream, curdlan as a coagulation polysaccharide is widely used as a gelling agent, water-binder, texturiser and film-former in meat products, noodles, surimi and seafood, prepared foods, dairy and plant-based products, as well as in wound-healing hydrogels and tissue-engineering scaffolds on the biomedical side.
In 2024, global sales of coagulation polysaccharide reached approximately 3,271 tons, with an average global market price of around US$11,962/ton. Production capacity varies significantly among manufacturers, with gross profit margins ranging from approximately 25% to 50%.
